Cookies:
Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Prepare the Dough:
In a large mixing bowl, cream together the softened butter and sweetener until smooth and well combined.
Add the eggs one at a time, mixing well after each addition.
Stir in the vanilla extract.
In a separate bowl, whisk together the almond flour, Zen Basil Seeds, and baking soda.
Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
Shape the Cookies:
Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them a few inches apart.
Flatten each cookie slightly with your hand or the back of a spoon.
Bake:
Bake for 10-12 minutes, or until the edges are golden brown.
Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Frosting:
Blend Ingredients:
In a mixing bowl, blend together the softened cream cheese and coconut oil until smooth.
Add the maple syrup or honey, and vanilla extract, and continue to mix until well combined.
Gradually add milk, one tablespoon at a time, to reach the desired consistency. The frosting should be thick but spreadable.
Frost the Cookies:
Once the cookies are completely cooled, spread a generous amount of frosting on top of each one.
If desired, add sprinkles for decoration.
